Chardonnay Selvenen
Tasting note
The first vintage! We are immersed in a bouquet of Williams pear, almond, vineyard peach, flint, butter, and brioche. The palate is dense, full, and at the same time spicy, mineral, and salty. The lively acidity provides plenty of drive and drinkability. The finish is long and lingering with notes of pear, thyme, apple, white pepper, and limestone.

Description
The Chardonnay from the Selvenen vineyard is a single-vineyard wine and an absolute rarity. Only 17 acres of our oldest Chardonnay vines are used to produce this wine. This results in an annual production of just two to three barriques, or 600 to 900 bottles. Our Grand Cru Chardonnay.
Grape Variety
100% Chardonnay. 8 acres of Latour clones were planted in 2003, and a further 9 acres were planted using the Sélection Massale method in 2007.
Vineyard
Selvenen. The Selvenen vineyard is located on the western edge of the village of Malans, at an altitude of 565 metres. Its name originates from the Romansh word 'selva', meaning 'forest'.
Soil
The soil of the Selvenen vineyard consists of glacial deposits and Üllrüfi sediments, containing large amounts of slate, magnetite and limestone.
Viticulture
We cultivate our vines using natural, holistic methods. In accordance with the principles of regenerative agriculture, we use various seeds and compost teas, and we are certified organic by Bio-Suisse and Knospe.
Maturation
The grapes are cooled overnight and pressed with their stems in the early morning. The Chardonnay Selvenen juice is then fermented directly in 225-litre French barriques. Depending on the vintage, malolactic fermentation is either encouraged or prevented deliberately. After 12 months, the contents of two to three barrels are transferred to a steel container for two months before the wine is bottled.
