Tasting note
This unique sparkling Malanser grape must is refined with an infusion of Japanese green tea, as well as various spices and herbs. The tea imparts subtle tannins and blends perfectly with the grape juice to create a harmonious aroma. On the palate, it offers a wonderful combination of subtle sweetness, lively acidity and fine effervescence.

Description
We have developed a tea recipe that perfectly complements our grape juice, together with the dream team of Franziska Wölfle (hostess and mixologist) and Marcel Koolen (head chef) from the ‘7132 Silver’ restaurant in Vals.
Grape Variety
60% Gewürztraminer and 40% Chardonnay. The Gewürztraminer imparts a wonderful aroma to the Sobre, while the early-harvested Chardonnay provides a mineral and juicy structure.
Vineyard
Ratschelga and Selviteiler. Georg and Ruth planted the old Gewürztraminer vines in the Ratschelga vineyard in 1982. The younger Chardonnay vines in the Selviteiler vineyard were planted in 2018.
Soil
The Ratschelga vineyard is located at our original site, right in the heart of the village. Our highest vineyard, at 590 metres, is characterised by slate, limestone and magnetite. The Selviteiler vineyard (531 m) has a soil made up of loam and sand.
Viticulture
We cultivate our vines using natural, holistic methods. In accordance with the principles of regenerative agriculture, we use various seeds and compost teas, and we are certified organic by Bio-Suisse and Knospe.
Maturation
A sparkling fusion of Malans grape juice, Japanese green tea, pink pepper, Earl Grey tea, rose petals, Ancho chilli and verbena.
