Tasting note

There are only a few bottles of this exceptional Vieux Marc left in stock. The various Pinot Noir pomaces were distilled between 1998 and 2003. It has notes of cloves, bitter almonds, honey and ripe melon. It is very smooth and spicy on the palate, with notes of ripe fruit, leather, cedar wood and butter.

Description

Due to the small scale of our annual Pinot Noir pomace distillations, it can take several years to fill a 225-litre barrique. These vintage blends then rest in oak barrels for at least 15 years before receiving the Vieux Marc designation.

Grape Variety

100% Pinot Noir. We obtain a good 40 litres of Marc de Pinot Noir from 600 kg of pomace.

Vineyard

Selvenen. The Selvenen vineyard is located on the western edge of the village of Malans, at an altitude of 565 metres. Its name originates from the Romansh word 'selva', meaning 'forest'.

Soil

The soil of the Selvenen vineyard consists of glacial deposits and Üllrüfi sediments, containing large amounts of slate, magnetite and limestone.

Viticulture

We cultivate our vines using natural, holistic methods. In accordance with the principles of regenerative agriculture, we use various seeds and compost teas, and we are certified organic by Bio-Suisse and Knospe.

Maturation

After fermentation and pressing, the pomace, which still contains a small amount of alcohol, is promptly collected and distilled. For this purpose, we use Swiss Pinot Noir clones from Selvenen, which have a wonderful, deep fruit profile.
