Tasting note

Despite being a warm 2022 vintage, it shows wonderful freshness and plenty of drive. There are notes of green apple, citrus, brioche and thyme. The palate is mineral and pure with a fresh, salty body and fine yeast notes.

Description

Zero dosage, also known as brut nature. You either love it or you don't. Once you've acquired a taste for it, one thing is certain: there's no going back, and everything else will taste sweet, or like 'lolly water' as the youngsters would say.

Grape Variety

50% Chardonnay and 50% Pinot Noir. We harvest these two classic Champagne grapes when they reach a sugar content of around 75 degrees Oechsle.

Vineyard

Heiligacker and Selviteiler. These two vineyards are located close to the valley floor on the south-western edge of Malans, at an altitude of around 531 metres.

Soil

The proportion of clay and sand is higher in vineyards located far below near the valley floor than in higher-altitude plots. The soil structure is completed by humus, slate and limestone.

Viticulture

We cultivate our vines using natural, holistic methods. We use various seeds and compost teas in accordance with the principles of regenerative agriculture, and are certified organic (Bio-Suisse and Knospe).

Maturation

The grapes for our sparkling wine are destemmed and fermented spontaneously. The young wine then slumbers for 12 months in used barriques. It is then bottled for the second fermentation and stored there for a further 18 months.
