Tasting note

The incredible calm and harmony with which the Schöpfi combines its complex, multi-layered character is unique. Everything is in balance. It has a soft, juicy start. There is a harmonious interplay of berry extract sweetness, perfectly integrated wood, lively acidity, elegant tannins, and spicy, slightly vegetal complexity. It is delicate and elegant, yet has enormous depth and an aromatic finish.

Description

The Pinot Noir Schöpfi vineyard is inextricably linked to our family's winemaking history. The Schöpfi Wingert is our oldest vineyard, and Johann Georg Fromm won a national award for this single-vineyard Pinot as early as 1912.

Grape Variety

100% Pinot Noir. In 2001, we planted 24 acres of Burgundy vines bearing the 777 and Fin/Très Fin clones. We have been pressing Pinot Noir Schöpfi from these vines since 2004.

Vineyard

Schöpfi. Evidence suggests that vines have been cultivated on the Schöpfi plot for over 1,000 years. This historic vineyard is surrounded by stone walls and is the origin of our Pinot Noir single vineyard adventure.

Soil

At 528 metres above sea level, the Schöpfi vineyard is our lowest-lying vineyard, ending at the bottom of the valley. The soil contains a high proportion of loam and sand due to the accumulation of river sediments.

Viticulture

We cultivate our vines using natural, holistic methods. In accordance with the principles of regenerative agriculture, we use various seeds and compost teas, and we are certified organic by Bio-Suisse and Knospe.

Maturation

For the Pinot Noir Schöpfi, 40% of the grapes are harvested and fermented with the woody stems. As with all our single-vineyard wines, the wine is then aged for 12 months in French 225-litre barriques.

Schöpfi

In terms of its historical and familial significance, the Schöpfi vineyard is the measure of all things for our winery. Vines have been cultivated here continuously for over 1,000 years. In 2001, we replanted the entire vineyard with Burgundy Pinot Noir clones. This was our first single-vineyard Pinot Noir.

The Schöpfi vineyard is our lowest-lying vineyard. Enclosed like a Burgundian clos, it extends down to 528 metres at the bottom of the valley. To counteract erosion, river sediments have always been 'scooped up' and deposited on the plot. This is where the name comes from, as well as the high proportions of loam and sand in the soil. Johann Georg Fromm recognised the potential of this site early on. His Pinot Noir from the Schöpfi vineyard won a gold medal at a national competition in 1912. Almost a century later, Schöpfi marked the beginning of our current single-vineyard Pinot Noir venture. In 2004, we vinified the parcel planted with Burgundy clones 777 and Fin/Très Fin separately for the first time to create our first single-vineyard Pinot Noir.
